I love chinesse meals.
I have tried cooking them; wok and all. I also like the taste of take away fried rice, have tried to cook it myself but I always get the boiled taste which I find rather bland.
Sad
Does anybody have a recipe to cook it the take away style.

hiya naughty boy,
cook your rice as normal, and make sure it's well drained,
heat some(about a teaspoon or two of each depending on the amount of rice you're making) sesame and regular oil(either ground nut oil or normal vegtable oil)
add some chinese five spice powder(again depends on how much your making so to taste between a pinch and a1/2 tsp)
add some finely chopped or crushed garlic (1to 2 cloves)
add some ginger(i use finely grated fresh ginger(about 1/2 an inch size but a little bit of ground ginger is fine)
and add some chopped deseeded chilli (to taste)
stir fry the above to release the flavours of the seasonings
add in your rice and some veg(if your using meat in the fried rice cook it before adding the rice, when you're cooking off the seasonings)
for veg i add a few garden peas(usually frozen ones but depends on the season) to keep it simple
add some soy sauce for colour and added flavour(i use dark soy)
when the rice is reheated and almost ready to go take the rice mixture out of the wok and add a little more oil to the wok, add two eggs slightly beaten with a little water(1-2 teaspoons) and a dash of soy sauce scramble the eggs then return rice mixture and toss the eggs through,
at this stage i add a few finely chopped spring onions just before i'm ready to serve so they don't go all soggy
sorry the 'recipie' isn't too coherently put together but it's one of those ones that is in my head not written down, my family all love the fried rice i do and say it's better than the stuff we get out of the take away
take care
shan
